Small-group hosting is the product. These are the people who make one lot legible across a café, a farm, and a roastery.

Founder · Curator & host

Natalia curates the coffee, producer, cafés, route, and conversations that connect both days. Her role is part host, part translator, and part sensory guide, making technical coffee knowledge understandable without flattening it.

She selects each featured lot against a written standard, documented quality, a producer with something real to teach, and a lot that can genuinely be followed from the farm into the roastery.

Juan

Roast development lead

Juan leads the roast-development portion of Day 2, showing how a professional reads green coffee, defines a sensory objective, and turns that intention into a roast curve.

During the session he develops the professional reference live, narrating charge, energy management, airflow, rate of rise, development, and the sensory result he expects, and then supervises the group as it designs, roasts, and revises its own profile.

The producers

The producer changes with the featured lot, that is the model. Each departure names its producer and farm once permission and documentation are confirmed, and producers are paid for their hospitality, their coffee, and their teaching. After launch, this page will keep an archive of past featured producers.

Partner cafés & roastery

Both days begin in real specialty cafés, and Day 2 runs inside a working roastery. Partners are named on each departure page once permission is confirmed, never before.
